Yams in Orange Sauce

Preparation Time: 10 minutes
Cooking Time: 1 hour 20 minut

Serves: 4


2 lb. Yams
1 Tbsp. Cornstarch
1 cup Orange juice
1/4 cup Pitted dates
3/4 tsp. Grated orange peel


Cook yams until tender. Drain and slice. Place slices in casserole dish.
Blend orange juice, dates and cornstarch until smooth. Cook in small saucepan over medium heat until mixture thickens, stirring constantly. Remove from heat. Stir in orange peel. Pour sauce over yams in casserole dish. Cover, and bake at 400F for 45 minutes. Remove cover and continue baking basting frequently with sauce, about 15 more minutes. Garnish with orange slices and sprigs of mint.
