Baked Squash and Fruit

Preparation Time: 10 minutes
Cooking Time: 40 minutes

Serves: 4


This is a great recipe to welcome autumn.
1 Butternut squash
1/2 cup pine nuts or walnuts
1 Tbsp. Olive oil
1/2 tsp. Each sea salt and fresh ground pepper
2 apples, quartered and cored
2 pears, quartered and cored
1 Tbsp. Lemon juice


Peel and halve squash; scoop out seeds and fibres. Cut into large chunks. Place on baking sheet; toss with pine nuts or walnuts, oil, salt and pepper. Bake in 400F oven for 15 minutes.
In a large bowl, toss apples and pears with lemon juice; add to squash. Bake for 25 minutes, stirring once, or until everything is fork-tender.
