Baked Cauliflower and Broccoli au Gratin

Preparation Time: 15 minutes
Cooking Time: 30 minutes

Serves: 6


1 small head broccoli
1 small head cauliflower
2 cups milk or non-dairy alternative
1/4 tsp. White pepper
3 Tbsp. Butter
1/4 cup plus 1 tsp. Whole wheat flour
1/2 lb. Cheddar cheese, grated
1/2 cup whole bread crumbs
2 Tbsp. Wheat germ


Preheat oven to 350F.

Cut broccoli into 1-inch lengths. Break cauliflower into small florets. In two separate saucepans steam vegetables for 12 to 15 minutes, or until just tender. Drain. Place vegetables in a 8 1/2 inch x 11-inch baking dish, and mix gently.

Scald 1 1/2 cups milk in a small saucepan. Add pepper and 2 tablespoons butter. Stir until butter is melted. Pour remaining 1/2 cup milk into a jar. Add flour, cover, and shake until smooth. Pour flour mixture into hot milk, stirring constantly, and cook until mixture thickens and bubbles. Add cheese and stir until well melted. Pour sauce over vegetables, top with bread crumbs and wheat germ, dot with remaining butter, sprinkle with paprika, and bake for 30 minutes. Serves 6.
