Asparagus Vinagrette

This makes a nice side dish for 3 or 4.

3/4 pound Asparagus
2 tbsp. olive oil
1 tbsp. lemon juice
1 tbsp. light vinegar such as rice, wine, or cider
2 scallions or green onions minced [white and green parts]
1 tsp. herbes de Provence


Trim or snap off unwanted end, blanch [or boil on 2 inches of water], and chill. Combine remaining ingredients with salt to taste in a shallow dish. Add asparagus and toss. Cover and marinate for 3 hours at room temperature or refrigerate up to 24 hours. Bring to room temperature, toss again and serve.
