Zucchini and Onion Saute

Serves: 2


1 Tbsp. Olive oil
4 cups zucchini, grated
1 onion, sliced in thin rings
2 Tbsp. finely minced garlic
2 - 4 Tbsp. finely chopped tarragon (or sub 1-2 Tbsp. dried)
1/2 cup vegetable or chicken broth
Sea salt and fresh ground pepper to taste


Place oil and garlic in a skillet, and cook over medium-high heat until garlic is slightly brown. Add other ingredients, except salt and pepper, and cook for 10 minutes, stirring occasionally, until zucchini wilts. Season with sea salt and pepper to taste.

Serves 2.
