Sweet-and-Sour Cabbage with Chard, Apples, and Raisins
Preparation Time: 10 minutes
Cooking Time: 20 minutes
1 Tbsp. Butter
1 Onion, sliced
5 cups Cabbage, shredded
1 cup water
1/3 cup Raisins
3 cups Chard, washed and sliced
1/2 Gold Apple, peeled, cored and sliced
2 tsp. Cider vinegar
1 1/2 tsp. maple syrup or honey
Sea salt to taste
In a large skillet with a lid, heat butter over medium heat. Add onion and saute until soft and translucent, 8 to 10 minutes.
Add cabbage, water raisins, and apple slices. Cover and cook for 5 minutes. Stir in the chard leaves and cook for another 6 to 7 minutes.
When the greens are tender, stir in vinegar, maple syrup or honey, and sea salt to taste. Serves 4.
