Cabbage And Mushroom Stir-fry
Preparation Time: 10 minutes
Cooking Time: 5 minutes
100g Shiitake mushrooms, chopped
1/2 lb.Medium tofu, pressed and drained
1 lb. Cabbage, sliced
3 Tbsp. Peanut oil
1/2 tsp. Sea salt
2 tsp. Tamari
1 tsp. Mirin sauce
Cut off and compost shiitake stems. Slice caps into 1/4" wide strips.
Heat oil in a wok or skillet. When hot, put in cabbage and mushrooms. Stir-fry for 1 minute until cabbage wilts. Reduce heat to medium. Crumble tofu into vegetables, stirring constatnly.
Mix sea salt, tamari and Mirin sauce. Add sauce to vegetables and stir-fry for another 5 minutes, stirring constantly. Serve over rice.
