Baked Carrots And Apple Casserole

Cooking Time: 1 hour

Serves: 4


2 cups sliced carrots
5 apples cut into 1/4-inch slices
2 Tbsp whole wheat flour
4 Tbsp honey
4 Tbsp butter
3/4 cup orange juice


Preheat oven to 350F.

Steam carrots for 12 minutes.
Put half the apples in a shallow 1 quart baking dish and cover them with half of the carrots. Sprinkle 1 tablespoon of the flour over the carrots and apples; then drizzle 2 tablespoons of the honey over the flour. Dot with 2 tablespoons of butter. Repeat the layers. Pour orange juice over entire casserole and bake for 40 to 45 minutes.
