Oven-Roasted Potato Slices with Orange and Thyme

Cooking Time: 1 hour
2 medium-sized yams or sweet potatoes cut into 1/8-inch slices
2 medium-sized potatoes cut into 1/8-inch slices
1 garlic clove, crushed
2 Tbsp. olive oil
1/4 cup Parsley (or 1 Tbsp. dried)
1 Tbsp. Thyme
1 Tbsp. Rosemary
1 strip orange zest
Sea salt and fresh ground pepper to taste
Preheat oven to 400F. Combine potato and sweet potato slices with garlic and oil in a large bowl. Toss to coat with oil. Bake on 10 x 14-inch sheet, turning potatoes once or twice as they begin to brown, about 40 minutes. Remove from oven.
Meanwhile, finely chop parsley, thyme, rosemary and orange zest together. Sprinkle over potatoes. Sprinkle with sea salt and pepper. Return to oven and bake for 10 minutes longer or until the potatoes are tender, turning them once. Serve hot.
