End of Summer Linguine
Preparation Time: 10 minutes
Cooking Time: 15 minutes
1 lb. Linguine
1/4 cup olive oil
1 small onion, chopped
1/2 red pepper, thinly sliced
2 large cloves garlic, minced
1 chile pepper, minced
1/4 cup tequila (optional)
2 tomatoes, seeded and chopped
2 Tbsp. fresh oregano (or 1 Tbsp. dried)
1/2 cup fresh cilantro, chopped (or sub parsley)
4 oz. Feta cheese
1 avocado, peeled, pitted and chopped
Sea salt and fresh ground pepper
Cook pasta as directed on package until al dente.
Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook for 2 minutes. Add the garlic, chile pepper, and tequila. Cook for 1 minute longer. Add the tomatoes, oregano and cilantro, and cook for 3 minutes, or until the tomatoes are soft.
Stir the cheese and avocado into the skillet. Stir and season with sea salt and black pepper to taste. Add the sauce to the pasta and mix thoroughly. Serves 4.
