Sauteed Beets with Garlic and Parsley
Preparation Time: 10 minutes
Cooking Time: 50 minutes
4 medium-large beets
3 Tbsp. olive oil
1 large garlic clove, minced
1 Tbsp. fresh parsley, chopped
Sea salt and fresh ground pepper to taste
Put beats in pot with enough water to cover by 1 inch. Bring to boil and turn down heat slightly to maintain a gentle simmer. Simmer for about 45 minutes until beets can be penetrated with a fork. Drain, let cool and peel skins.
Slice beets into 1/4-inch slices. Heat olive oil in a skillet over medium heat. Spoon in garlic. When the garlic begins to sizzle, add beets and stir for about 5 minutes, just long enough to heat beets through. Sprinkle with parsley and salt and pepper. Sautee for 1 more minute and serve.
