Sauteed Summer Squash with Corn and Avocado

Preparation Time: 10 minutes
Cooking Time: 10 minutes

Serves: 4

Ingredients

3 medium summer squash
2 tsp. olive oil
1 bell pepper, diced
6 scallions, trimmed (or sub finely chopped onion)
2 cloves garlic, minced
2 cups corn kernels
1 avocado, peeled and chopped
1 tsp. ground cumin
1 tsp. sea salt
1/4 tsp. fresh ground black pepper

Instructions

Grate summer squash and set aside.

Heat oil in a large skillet or wok. Add pepper, onion and garlic. Cook 2 minutes over medium heat. Add summer squash and corn. Cook 5 minutes. Add remaining ingredients and cook just until avocado softens, but vegetables are still firm. Serves 4.
