Cauliflower Timbales

Preparation Time: 15 minutes
Cooking Time: 40 minutes

Serves: 6

Ingredients

1 medium cauliflower
2 eggs, beaten
3 Tbsp. grated Parmesan cheese
1 cup milk
1/2 tsp. sea salt
1/8 tsp. ground pepper
Preheat oven to 325F.

Instructions

Break cauliflower into tiny separate florets, and steam until tender. Nearly fill individual greased ramekins or custard cups with the cooked cauliflower.
Beat together the remaining ingredients.
Pour custard mixture slowly into the cups over the cauliflower. Place the custard cups in a large roasting pan or sheet cake pan. Pour an inch of hot water into the bottom of the pan. Bake the timbales for 40 minutes or until set. Serve as individual side dishes.
