Parma-Style Fried Cauliflower
Preparation Time: 15 minutes
Cooking Time: 25 minutes
1 1/2 - 2 lb. Cauliflower, cored
1/2 cup water
1 tsp. Lemon juice
Dash hot pepper sauce
6 Tbsp. All-purpose flour
6 Tbsp. Parmesan cheese, grated
1 egg, lightly beaten
1 tsp. fresh grated lemon peel
Sea salt to taste
Cook cauliflower in at least 3-quarts boiling water until just tender, 10 to 12 minutes. Rinse under cold water. Drain. Cut or break the cauliflower into small flowerets.
Combine the water, lemon juice, and hot pepper sauce in a medium bowl. Beat in the flour until smooth. Beat in the cheese, egg, and lemon peel.
Heat about 2 inches of oil in a medium saucepan until almost smoking. Dip the flowerets into the batter and then fry them, about six at a time, until golden, about 4 to 5 minutes. (Oil should be hot enough that cauliflower will turn dark gold in this time.) Drain on paper towels and keep warm in a low oven while frying the remaining cauliflower. Before serving, sprinkle on salt to taste.
