Asparagus in Lemon Butter

Serves: 4


2 cups water
1 bunch Asparagus
1 Tbsp. butter
2-3 Tbsp. fresh lemon juice
1 pinch dried tarragon
1 tsp. minced chives (optional)
1/4 cup toasted almonds
Sea salt and fresh ground pepper to taste


Bring the water to a boil in a saucepan. While the water heats, stem the asparagus by snapping the dry end. Blanch asparagus in the boiling water until tender, and drain well. In a serving bowl, combine asparagus, butter lemon juice, tarragon, and chives (if using). Mix in the toasted almonds; add sea salt and ground pepper to taste. Serve hot.
