Spinach with Walnuts and Raisins
Preparation Time: 10 minutes
Cooking Time: 5 minutes
3 Tbsp. Raisins
1 bunch spinach
3 garlic cloves
3 Tbsp. chopped walnuts
1/4 cup olive oil
Sea Salt and fresh ground pepper to taste
Soak raisins in hot water until ready to add them to spinach.
Remove coarse stems from spinach, rinse leaves well, and shake off the excess water. Place the spinach in a large pot. Steam on high heat for 2 to 3 minutes, tossing the leaves several times. The spinach should be bright green and the leaves still retaining some of their shape, although the volume reduced. Drain well.
Saute the garlic and walnuts in the olive oil for a few minutes, until golden. Add the spinach. Stir in the drained raisins. Toss to coat the spinach with the hot oil. Add sea salt and pepper and serve immediately.
