Broiled Zucchini with Parmesan
Preparation Time: 10 minutes
Cooking Time: 12 minutes
4 medium zucchini
1 1/2 Tbsp. melted butter
Sea salt and fresh ground black pepper to taste
1/2 cup grated Parmesan cheese
Bring about 1 inch of salted water to boil in the bottom of a steamer. Scrub zucchini and put them in, whole, in the top of the steamer. Steam until just tender, approximately 7 to 10 minutes. They should give a little to the touch; be careful to not overcook. Let them cool, then halve them lengthwise, leaving the stem ends attached.
Preheat broiler. Put the butter in the bottom of a low-sided baking dish just large enough to hold the zucchini halves in one layer. Put the zucchini in the dish cut side down, then turn them cut side up to coat with butter. Season with salt and pepper. Sprinkle with cheese. Broil until golden brown, watching carefully to not overcook. Serve immediately.
