Pasta with Arugula and Mushrooms
Preparation Time: 10 minutes
Cooking Time: 15 minutes
16 oz pasta
3 Tbsp. Extra-virgin olive oil
8 cloves garlic, minced
1 bunch arugula, washed and chopped
1/4 lb. Shiitake mushroom, chopped
2 Tbsp. Dried thyme
1/4 cup butter
1/4 cup cream
Sea salt and fresh ground pepper to taste
Fresh grated Parmesan cheese to taste
In a large pot, bring water to boil and cook pasta until al dente.
Meanwhile, in a medium skillet heat 3 tablespoons of olive oil. Add garlic and sautee until just golden, about 2 minutes. Add mushrooms and arugula and cook, stirring constantly, until arugula is just wilted, about 5 minutes.
Drain pasta and place in a serving bowl. Add butter, cream and thyme to pasta. Toss, and add arugula and mushrooms. Toss until well coated; add sea salt to taste. Serve with fresh grated Parmesan cheese and fresh ground pepper to taste. Serves 4.
