Spicy Indian Wilted Chard

Serves: 4


2 Tbsp. Canola oil or butter
2 Tbsp. minced Shallots
1 Tbsp. Fresh Ginger, grated
1 tsp. ground cumin
1 tsp. ground tumeric
1 tsp. ground coriander
1 small hot pepper, minced (fresh or dried)
1/2 tsp. sea salt
2 Tbsp. water
1/2 cup green onions, chopped
1 bunch chard, chopped


In a large skillet or wok, warm oil or butter over low heat. Add shallots, ginger, cumin, turmeric, coriander, hot pepper, and salt; saute for 3 minutes, stirring occasionally. Do not allow ingredients to burn.

Add water and mix with spices in case they stick to pan and to get steaming started. Add green onions and chard and toss with spice mixture. Cover and cook over medium-high heat, allowing greens to wilt. Remove cover periodically to stir. Cook until chard is tender, 6 to 8 minutes. If there is too much liquid, remove cover, turn heat to high, and cook it off, while stirring greens. Serve immediately (over rice if desired).
