Chard with Lemon Butter and Pistachios
Preparation Time: 10 minutes
2 lb. Chard, rinsed and trimmed
Bring a large pot of lightly salted water to a boil and blanch chard for 1 minute. Drain well, squeezing out any excess water from the leaves, and then chop coarsely. Melt the butter in a skillet over medium heat, and stir in the garlic and lemon zest. Add the chard and sautee for about 5 minutes, until tender. Sprinkle the lemon juice over top, and increase the heat. Cook for a few minutes longer, until the liquid reduces. Stir in the pistachios, and serve at once.
