Potato Blue Cheese Pizza

Preparation Time: 10 minutes
Cooking Time: 40 minutes

Serves: 8


2 lb. 4 oz. Pizza dough
12 oz. (3 cups) Onions, chopped
2 Tbsp.
Olive oil
1 lb. 8 oz.Shredded potatoes slightly fried
1/3 cup Parsley, chopped
1/3 cup Fresh basil, sliced
1 1/2 tsp. Salt
3 Tbsp.
Garlic, minced
3/4 tsp.Ground pepper
6 oz. (3/4 cup)Blue cheese, crumbled
12 oz. (3 cups)Mozzarella cheese, shredded


1. Line each of three 10-inch pizza pans with 12 ounces pizza dough. Bake at 425 degrees Fahrenheit for 10 to 12 minutes or until lightly browned.
2. Sautee onions in oil until tender. Add potatoes and seasonings; mix well.
3. Distribute 1/3 of potato mixture over each crust. Crumble 2 ounces blue cheese over top of each pizza. Sprinkle 4 ounces mozzarella cheese over all.
4. Bake at 425 degrees Fahrenheit for 6 to 8 minutes or until cheese melts and pizza is lightly browned.
5. Cut each pizza into 8 pieces
