This is an easy and tasty alternative to grilled hamburgers.
1 medium eggplant
3 Tbsp. olive oil
Slices of your favourite cheese
12 basil leaves
Sea salt and fresh ground pepper to taste
Wash eggplant and cut off the ends, but do not peel. Slice into six slices, excluding the "heels." Brush both sides of each slice with olive oil and grill for five minutes each side or until tender; or broil for about the same time. Meanwhile, toast the bread.
Assemble the sandwiches by placing a hot eggplant slice, some cheese, the tomato slices, one leaf of lettuce and 2 torn basil leaves (the kids may prefer mayo, mustard or ketchup) between the toasted slices of bread.
