Daikon And Carrot Salad

Preparation Time: 15 minutes

Serves: 6

Ingredients

1 1/2 cup Carrots, grated
1 1/2 cup Daikon, grated
4 Scallions, minced
Fresh Cilantro to garnish
Toasted Sesame seeds to garnish

Dressing:
1/4 cup olive oil
1 Tbsp. sesame oil
1 Tbsp. Tamari
1 tsp. mirin or honey
3 Tbsp. rice vinegar
1/2 tsp. fresh grated ginger
Dash of cayenne

Instructions

Clean and chop vegetables. Whisk together olive oil, sesame oil, tamari, mirin, rice vinegar, ginger, and cayenne. Toss with vegetables and serve on a bed of lettuce or other salad green. Garnish with toasted sesame seeds and fresh cilantro.
