Grilling caramelizes the carrots' natural sugar, and intensifies the wonderful flavour of Bob's fresh carrots.
4 to 6 fresh carrots
1 Tbsp. olive oil
Wash carrots and carefully cut them in half lengthwise. Set them on a platter and toss them with the olive oil and salt to taste.
Prepare a moderate charcoal fire in a covered grill. Cluster the coals on one side so that you have area where the carrots can cook by indirect heat. Cook carrots, cut side down, directly over the coals until nicely browned. Be careful to not let them burn. Turn them over and cook the other side by indirect heat. Cover the grill and let carrots cook until tender, about 15 minutes.
