Stuffed Squash

Preparation Time: 15 minutes
Cooking Time: 1 hour

Serves: 4


1 large or 2 small squash preferably butternut
2 tbsp. butter
1 cup minced onion
1/2 lb. mushrooms or zucchini, minced
1 stalk celery, minced
1 large garlic clove [or more], minced
1/2 tsp. salt, sage, thyme, and pepper
2 tbsp. lemon juice
1/4 cup minced walnuts
1/4 cup sunflower seeds
1/4 cup raisins
2 cups bread crumbs
6 to 8 dried apricots diced
1 cup grated cheese of your choice


Pre heat oven to 350. Wash, halve and bake squash in 1 inch water for 30 min.
Saute onions and garlic, celery, mushrooms and or zucchini for 10 min. in butter. Mix in everything else. Fill and bake squash for an additional 20 min covered. Serves 4 or more as a full dish.
