Basic Fiddlehead Ferns

1/2 - 1 lb Fiddlehead ferns
1 Tbsp. butter
2 garlic cloves, minced
Trim base of each fern. Rub off any brown coverings. Rinse thoroughly under running water. Drop ferns into a large pot of boiling, lightly salted water. Boil until tender throughout, about 5 minutes, testing often. If undercooked, the full flavour will not develop. Drain well and serve at once, with melted butter and minced garlic.
You can also serve with Hollandaise, Maltaise, cream, or cheese sauce. Combine with light mustard vinaigrette.
