Corn And Black Bean Salad

Preparation Time: 10 minutes
Cooking Time: 5 minutes

Serves: 4


2 cups cooked corn kernels
1 15 oz can black beans, rinsed and drained
1 cup tomatoes, chopped
1/2 cup Green onions, chopped
1 Green pepper, finely chopped
2 Tbsp. Cilantro, chopped
1 Tbsp. Lime juice
1 Tbsp. Rice vinegar
2 Tbsp. Olive oil
Sea salt and fresh ground pepper to taste


Cook corn in boiling water until tender, about 2 minutes. Cool and remove from cob. Combine corn, beans, tomatoes, onions, pepper, and cilantro in a bowl.

Mix remaining ingredients in a cup. Pour over corn mixture and toss well. Let sit for 30 minutes at room temperature to combine flavour. Taste and adjust seasoning. Serves 4 as a side dish, especially nice with a BBQ dinner.
