Basil Pesto

Preparation Time: 10 minutes

Serves: 4


3 bunches of basil,leaves only
1 bunch of curly parsley, leaves only
2 cups olive oil
1 large red onion, peeled and quartered
5 cloves of garlic, peeled
Juice of 1 lemon
1/4 cup hemp hearts
1.5 tsp sea salt
1 tbsp maple syrup
1/2 tsp ground pepper


Place onions, garlic, oil, lemon, maple syrup and spices into food processor and blend until creamy. Add basil, parsley and hemp, blend for 1 minute. Ensure the mixture is uniform.

Pesto can be frozen in one cup quantities and used for pastas, sandwich spread or as a dip base.

Makes 4 cups
