Vegetable Pasta With Cheese
Preparation Time: 20 minutes
Cooking Time: 15 minutes
12 oz. Angel hair or linguine pasta
3 Tbsp. extra-virgin olive oil
1 onion, peeled and cut into wedges
2-3 garlic gloves
2 Tbsp. balsamic vinegar
1/2 cup chicken or vegetable broth
4 cups cooked vegetables (cabbage, carrots, kale, broccoli, etc.)
1-2 tsp. dried oregano
3 Tbsp. parsley, chopped (or 1 Tbsp. dried)
Sea salt and fresh ground pepper to taste
6 oz. Cheese (feta, cheddar or Monterey Jack)
1/4 cup Grated Parmesan
Cook pasta according to instructions. Drain and place in a large bowl.
Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook for 4 minutes or until almost soft. Add garlic, vinegar and broth.
Bring to boil. Reduce heat to low and simmer for 5 minutes. Add cooked vegetables, oregano, parsley and season with sea salt and pepper. Simmer for 3 minutes, or until heated through. Pour over pasta, top with cheeses and toss to coat well.
