Roasted Cauliflower With Garlic And Almonds

1 head Cauliflower
2 Tbsp. Butter
1 Tbsp. Olive oil
3 strips bacon, chopped
2 shallots (or 1 leek), chopped finely
2 garlic cloves, crushed
1/3 cup almonds, slivered
2 Tbsp. Fresh parsley, chopped
1/4 cup Fresh grated Parmesan
Fresh ground pepper to taste
Preheat oven to 375F. Blanch cauliflower in lightly salted boiling water for 2 minutes, and then drain well. Transfer to a shallow, ovenproof dish, and set aside.
Heat the butter and olive oil in a small saucepan over medium heat. Stir in the shallots (or leeks) and garlic, and cook for 5 minutes more, until softened. Add the almonds, sautee until golden, and then stir in the parsley.
Spoon the almond mixture on the cauliflower, scatter the Parmesan evenly over top, and season with pepper. Bake for 12 - 15 minutes, until the cauliflower is just tender and the topping golden.
