Stuffed Mushroom Spinach Pizza

Cooking Time: 20 minutes

Serves: 6


1 bunch Spinach
1/4 lb. mushrooms, coarsely chopped
1/2 cup pizza sauce
1/4 cup plus 2 tablespoons freshly grated Parmesan cheese
1 or 2 garlic cloves, pressed
Sea salt and ground black pepper to taste
Your favourite pizza dough
2 cups shredded mozzarella cheese
1 tomato, thinly sliced


Preheat oven to 425 degree's. Squeeze the moisture from the spinach. Combine the spinach, mushrooms, pizza sauce, 1/4 cup of the Parmesan cheese and garlic in a medium mixing bowl and mix well. Season with salt and pepper. Unroll the pizza dough. Roll into a 10"x14" rectangle on a lightly floured surface. Fit into an 8"x12" baking dish with sides of the dough extending evenly over the sides of the dish and press lightly. Sprinkle with 1 cup of the mozzarella cheese. Layer with the spinach mixture, remaining 1 cup mozzarella cheese and tomatoes. Make a diagonal slit in the dough at each corner. Bring the sides of the dough together at the center and twist to seal. Sprinkle with the remaining 2 tablespoons Parmesan cheese. Bake for 15 to 20 minutes or until golden brown.
