Spinach Rice Casserole

Serves: 6

Ingredients

4 cups cooked brown rice
2 lbs. Spinach, chopped
1 cup onion, chopped
2 cloves garlic, chopped
3 Tbsp. Butter
4 eggs, beaten
1 cup milk or non-dairy beverage
1 1/2 cup cheddar cheese, grated
1/4 cup parsley, chopped
2 Tbsp. Tamari
1/2 tsp. Sea salt
Dash of nutmeg and cayenne
1/4 cup sunlower seeds
Paprika

Instructions

Saute onions and garlic with salt in butter. When onions are soft, add spinach. Cook 2 minutes.

Combine all ingredients except sunflower seeds and paprika. Spread into buttered casserole dish and sprinkle sunflower seeds paprika on top. Bake, covered, for 35 minutes at 350F.
