Raw Leek Pesto

Preparation Time: 10 minutes

Serves: 3


.5 kg of leeks, washed well and roughly chopped, with dark ends
1.5 cups olive oil
2 garlic cloves, peeled
Juice of 1 lemon
1/2 cup parsley, leaves only
1/4 cup hemp hearts


Place all ingredients into food processor and blend until creamy.

Shelf life two weeks refrigerated, freeze in 1 cup portions or into ice cube trays.

Makes 3 cups.
