Pasta With Chard, Pepper And Thyme

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Serves: 4


2 Tbsp. Olive oil
8 cloves garlic, minced
1 bunch red chard, cleaned, stemmed and chopped
1 red pepper, seeded and chopped into thin strips
3 tsp. fresh thyme
Sea salt and fresh ground pepper to taste
14 ounces penne pasta, cooked al dente
Fresh grated Parmesan cheese to taste


Cook pasta in boiling water until al dente.

While pasta is cooking, wash and stem chard. Seed and slice pepper. Put oil in wok or large skillet over medium heat. Add garlic and cook until golden, about 2 minutes. Add pepper and cook for 1 or 2 minutes. Then add chard and cook, tossing a few minutes until just wilted, about 5 minutes.

Combine vegetables with pasta and toss. Add sea salt, pepper and thyme and toss again. Add more olive oil if desired. Add Parmesan, toss and serve with fresh pepper and Parmesan on the table.
