Braised Greens With Chickpeas

Preparation Time: 10 minutes
Cooking Time: 25 minutes

Serves: 4


1 bunch Chard
1 bunch Spinach
(Chard and spinach can be substituted for each other)
3 Tbsp. Olive oil
2 cloves garlic
1/2 medium onion, chopped
Pinch hot red pepper flakes
1 15 oz can chick peas
Sea Salt to taste
1 1/2 tsp. lemon juice


Wash leaves of greens and drain well. Stack the leaves a few at a time and slice crosswise into 1/4-inch wide ribbons. Set aside.

Heat olive oil in a 12-inch skillet over moderate heat. Add garlic and onion and saute until onion is soft, 5 to 10 minutes. Add hot-pepper flakes and saute 1 minute to release aroma. Add chickpeas and stir to coat with seasoning. Add chard leaves, season well with salt and stir to blend. Since the leaves are bulky, you may need to let them cook down slightly before adding more. Add chard before spinach. Cook, stirring, until the leaves have wilted enough that can cover the skillet. Cover, adjust heat to maintain a gentle simmer and cook until greens are tender, about 10 to 15 minutes. Remove from heat and stir in 1 1/2 teaspoon lemon juice. Adjust seasoning if needed.

Serve warm. Serves 4.
