Green Beans In Lemon Butter

Preparation Time: 15 minutes
Cooking Time: 2 minutes

Serves: 4


2 cups Water
2 cups Green Beans
1 Tbsp. Butter
3 Tbsp. Fresh lemon juice
1/4 tsp. Fresh tarragon (or pinch of dried)
1 tsp. Green onion tops, finely chopped
1/4 cup Toasted Almonds
Sea salt and fresh pepper to taste


Bring water to boil in a saucepan. While the water heats, stem the green beans. Blanch the beans in the boiling water for 2 minutes, and drain them well. In a serving bowl, combine the hot green beans, butter, lemon juice, tarragon and green onion tops. Mix in the toasted almonds, and sea salt and pepper to taste. Serve hot.
