Potatoes With Saffron, Lemon And Parsley

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Serves: 2


1 lb. Potatoes, diced
2 cloves garlic, finely chopped
Grated rind and juice of 1/2 lemon
Pinch of saffron, soaked in a little water
1/2 tsp. tumeric
1 Tbsp. Fresh Parsley, chopped
1 Tbsp. Olive oil
Sea salt and pepper to taste


Heat oil in saucepan and when hot put in the garlic, lemon rind, saffron (with its water) and turmeric. Stir well.

Add potatoes and mix with seasonings. Pour in the lemon juice and season with salt and pepper to taste.

Add enough water to come about half-way up the potatoes. Put cover on and bring to boil. Reduce the heat and then simmer, stirring from time to time, for 15 minutes or until the potatoes are cooked, and most of the liquid has evaporated. Garnish with fresh parsley before serving. Serves 2.
