Collard Greens With Potatoes And Chickpeas

2 Tbsp. Olive oil
4 cloves garlic, minced
1 tsp. ginger, minced
3 shallots (or onions), finely chopped
1 bunch collards, stemmed and chopped
3 Potatoes, cut into small cubes
300g Chickpeas, cooked
100g Shiitake mushrooms, chopped
1/4 cup cilantro, finely chopped
Fresh ground pepper and sea salt to taste
Finely chop shallots or onions. Place olive oil in skillet over medium heat and sautee onions until translucent. Add minced garlic and ginger and sautee another 2 minutes.
Add cubed potatoes and sautee another 5 minutes, stirring frequently. Add collards and continue to cook, stirring frequently, until potatoes are just soft and collards start to wilt. Add mushrooms, stirring frequently, for about 2 minutes.
Season with fresh pepper and sea salt to taste. Add cilantro and serve. Serves 4.
