Bok Choy With Shiitake And Tofu

1/4 lb. shiitake mushrooms
1 bunch bok choy
1 lb. Soft tofu
2 Tbsp. tamari
2 carrots, peeled and sliced
1 Tbsp. canola oil
2 Tbsp. fresh ginger, minced
1 tsp. toasted sesame oil
Wash bok choy and cut leaves away from stalks. Cut stalks into 1-inch squares. Cut leaves into strips. Set aside.
Put cubed tofu in a bowl and sprinkle with 1 tablespoon tamari. Have carrots and other ingredients ready to go. Heat a large wok over high heat. Add the canola oil, and swirl in wok to coat sides, then add ginger. Stir-fry for 15 seconds. Add mushrooms and stir-fry over high heat for 1 minute. Add carrots and tofu and continue to stir-fry over high heat for 2 minutes.
Add the bok choy stalks and continue to cook over high heat for 30 seconds. Add the leaves and stir-fry for 2 minutes. Cover occasionally to develop a bit of steam, and add a small amount of water if necessary to avoid sticking. Season to taste with additional tamari and sesame oil if needed.
