Baked Bok Choy With Gruyere

Preparation Time: 15 minutes
Cooking Time: 1 hour

Serves: 4

Ingredients

1 1/2 pounds bok choy, cleaned, stalks and leaves separated
1 cup chicken broth
1 Tbsp. butter
1 1/2 Tbsp. flour
2 tsp. Dijon mustard
1 cup (about 2 ounces) grated Gruyere cheese
Salt to taste
Few drops hot pepper sauce

Instructions

Cut bok choy stalks into 1/2-inch slices (you should have 4 cups). Combine in large, shallow baking dish with broth. Cover and bake 35 minutes in 400-degree Fahrenheit oven. (Vegetable will still be quite crisp.) Chop leafy tops roughly. Add to stalks and stir. Bake 10 minutes longer, until leaves are wilted.

Heat butter in small saucepan. Add flour and stir 1 minute over moderately low heat. Whisk in mustard. Pour broth from bok choy into pan. Whisk on high heat until sauce thickens slightly. Add cheese and stir until smooth. Add salt and pepper sauce to taste.

Pour sauce over bok choy and fold in gently. Return to oven for 10 minutes, until hot and bubbling. Makes 4 servings.
