p1 head Bok choy
3 1/8-inch slices of peeled ginger
2-3 celery stalks, sliced into 1/4 inch pieces
1 tsp. olive oil
1 Tbsp. water
Sea salt to taste

Cook, stirring frequently, until leaves begin to wilt, about 2 minutes. Add 1 tablespoon of water, sprinkle with salt and cover. Cook for another minute, until stalks are crisp-tender and leaves are wilted but still green. Remove, serve hot garnished with toasted walnuts.
