Bok Choy With Celery And Ginger

Serves: 4


p1 head Bok choy
3 1/8-inch slices of peeled ginger
2-3 celery stalks, sliced into 1/4 inch pieces
1 tsp. olive oil
1 Tbsp. water
Sea salt to taste
2 Tbsp. toasted walnuts, coarsely chop ed


Plunge bok choy in water, clean and drain. Cut bok choy lengthwise into 1/3-inch pieces. If leaves are very wide, slice them in half. Cut ginger into thin slices. Chop celery into 1/4-inch diagonal pieces.

Coat wok with oil. Add ginger and stir-fry for 10 seconds. Add celery and stir-fry for 1 minute, until colour brightens. Add the bok choy and stir to combine with celery and ginger. Cook, stirring frequently, until leaves begin to wilt, about 2 minutes. Add 1 tablespoon of water, sprinkle with salt and cover. Cook for another minute, until stalks are crisp-tender and leaves are wilted but still green. Remove, serve hot garnished with toasted walnuts.
