Broccoli And Carrot Stir-fry

Cooking Time: 6 minutes

Serves: 6


1 Tbsp. olive oil
2 thin slices fresh ginger
2 clove Garlic, minced
3 cups Broccoli, chopped
2 cups Carrots, thinly sliced
4 Green Onions, chopped
3/4 cup vegetable or chicken broth
1 Tbsp. cornstarch
2 Tbsp. soy sauce or tamari


Heat oil in wok. Add ginger and garlic; stir 1 minute. Add broccoli, carrots, and onion. Stir-fry for 1 minute. Add broth, cover, and simmer 3 minutes.

Mix cornstarch in 1 tablespoon cold water and stir into mixture. Stir until thickened, then add soy sauce. Cook 1 more minute and serve.
