1 lb. Penne Pasta
4 cups Broccoli, chopped
6 cloves garlic, minced
1/2 cup olive oil
1 Tbsp. dried thyme
Sea salt and fresh ground pepper to taste
Fresh grated Parmesan cheese to taste
Cook pasta in boiling water according to package instructions until al dente.
Meanwhile, in a large skillet or wok, saute garlic in olive oil over medium heat until garlic is slightly golden. Add broccoli and stir frequently. Pour a couple of spoonfuls of pasta water into skillet to steam broccoli until tender.
When pasta is al dente, drain and place in warm serving bowl. Toss in broccoli mixture, add thyme, sea salt, fresh pepper and grated Parmesan to taste. Drizzle on extra olive oil or butter if desired. Serve immediately. Serves 4.
