Potato Leek Soup

Preparation Time: 20 minutes
Cooking Time: 3 hours

Serves: 12


1/2 bag yellow potatoes
3 medium sized leeks, carefully washed and thinly sliced
3 cloves of garlic, peeled
2 tbsp sea salt
1/4 tsp black pepper
6 cups water


Combine all ingredients in a crock pot and cook for 3 hours or until potatoes are tender. Cool and transfer to a food processor to blend until smooth, saving a about a cup or two for a chunky soup.

Adjust seasoning and serve. Great frozen!
