Kale, Lentil And Pepper Stir Fry

Preparation Time: 15 minutes
Cooking Time: 10 minutes

Serves: 4


350 g kale
1 pepper, sliced
1 onion, thinly sliced
2.5 cm of ginger root
2 tbsp. sunflower oil
2 tbsp. sesame oil
1 clove garlic, peeled and crushed
4oo g lentils, ready to use
2 tbsp. sesame seeds

1 tsp. dark soy sauce
1 tbsp. chili sauce
3 tbsp. water
1 tsp. lime juice


Remove the stalks from the kale and discard. Shred the leaves. Peel and grate the ginger. Prepare sauce by mixing all sauce ingredients together into a small bowl; set aside.
Blanche the kale and drain. Heat the oils in a wok or deep frying pan. When hot, stir fry the pepper, onion, ginger and garlic over a high heat for 3 minutes. Add the kale together with the lentils and sauce. Stir well, cover and cook over low heat for 3 to 4 minutes until vegetables are tender. Scatter the sesame seeds over top and serve warm.
