Storage

Store fresh Fiddleheads cooled (35 F) and tightly wrapped to prevent them from drying out. If stored, they may need to be trimmed just before use since the cut end will darken in storage. They may be kept in refrigeration for about 10 days, although flavor will be best if used as soon as possible after harvest.

Fiddleheads have antioxidant activity, are a source of Omega 3 and Omega 6, and are high in iron and fibre.

Basic Cooking Instructions

The flavour of a fiddlehead fern is mild, and perhaps most closely resembles asparagus. They are pleasently crunchy with a nutty, slightly bitter bite, which is why you'll see so many fiddlehead recipes calling for butter and salt. Treat the fiddleheads like asparagus tips and you can't go wrong.
