Varieties

The Hass variety of avocados makes up over 75% of the U.S Avocado crop. They are about the size of a pear, have a brownish-black skin when ripe and contain a yellow, green flesh with a nice nutty flavour. Another variety of avocado you may be familiar with is the Florida-grown Fuerte avocado. It is of a much larger size, with bright green skin and a more watery flesh. Since this variety has less fibrous content, they are much lower in calories.

The Zutano and Becon variety are similar to the Fuerte but are not as available. And the Cocktail Avocado, a very small seedless variety, is delicious but very difficult to find.

Storage

If you purchase unripe avocados, store them at room for up to 7 days. Do not place unripened avocados in the fridge. They will never ripen and slowly begin to rot.

If you have avocados that are ripe but you are not ready to use them, it is best to refrigerate them as this will slow down the ripening process. They can be kept in the fridge up to two days, after that, they begin to lose their flavour and begin to turn dark.

Nutritional and Medicinal Properties

Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit.
